A whole honeyed red date in the centre — the way Beijing eats zongzi.
Every one of these is wrapped by hand in bamboo leaves on the morning of delivery, tied with cotton string and steamed slowly so the rice drinks in the filling. It arrives fresh, never frozen — steam for ten minutes if it has cooled.
